Flagship Reserve is a special version of our signature Flagship cheese. It is made only on days when the milk composition is just right. The last curds on the table from these makes are used to produce Flagship Reserve truckles as it allows for slightly lower moisture, higher salt content and thus a richer taste and texture while maintaining a clean, creamy finish. In addition to using this special raw material, Flagship Reserve is traditionally cloth-bound and open-air aged. This method allows a 14 to 16% moisture loss during aging, concentrating the already rich flavor and producing a long finish. -- MEMORIAL DAY SHIPPING SCHEDULE --

Because of the holiday, orders will not be shipped on Monday, May 28th. Therefore, the following shipping rules will apply:

• Orders placed on or after Monday, May 21st, that indicate shipping for Ground and Express Saver will ship on Monday, June 4th.
• Orders placed on or after Wednesday, May 23rd, that indicate shipping for Standard Overnight or 2-Day will ship on Wednesday, May 30th.

-- REGULAR SHIPPING SCHEDULE --

Orders must be placed by end-of-day Tuesday to arrive by the end of that week. Wednesday is the last day of the week for orders to be shipped.

• Orders placed Monday and Tuesday will ship on Wednesday.
• Orders placed Wednesday through end-of-day Sunday will ship on Monday (excluding holidays).
• For orders shipping via Ground or Express Saver, orders must be placed by end-of-day Sunday to ship on Monday and arrive by the end of that week. Ground and Express Saver shipments go out only on Mondays, excluding holidays.
