Located in Putney, VT, Vermont Shepherd, also known as Major Farm, has been crafting artisanal sheep milk cheeses since 1993. The farm hosts a herd of 250 dairy sheep that are out on pasture whenever weather permits. Sheep have a relatively short lactation cycle so the cheesemaking is seasonal and sheep products from Vermont Shepherd are only available August through April. In the interest of extending their cheesemaking production, owners David and Yesenia developed an aged tomme with cow and sheep milk. The sheep milk comes from their own herd and the cow milk comes from a farm down the road milking 12 Jersey cows. All of the cheeses made on the farm are aged in a man-made cave that is more than four feet underground, making it naturally damp and cool, perfect for cheese aging. Inside the cave, wheels rest of wooden boards that help the cheese develop natural rinds.
