Sprout Creek is the brainchild of three high school teachers who were feeling a bit disheartened by the educational opportunities available for students in the early 1980’s. They wanted to develop an experience for students that would instill them with a sense of responsibility and sound values. After careful consideration, they determined that a farm setting would be ideal. The school was built on the site of a turn-of-the-century farm in Poughkeepsie, NY. The programs were a success from the get go and today they have visits from 5,000 children annually. Sprout Creek uses their natural surroundings and the functioning farm (chickens, dairy cows and goats, vegetable gardens) to teach kids about environmental responsibility, farming, and accountability. The founders of Sprout Creek made the property a fully functioning farm and a huge part of the farm is its farmstead cheesemaking operation. They have mixed herds of cows and goats and all the animals spend as much time as possible out on pasture, usually from March through November. The creamery produces over 10 varieties of cheese including fresh, aged tommes, and a blue. All except for the fresh varieties are made with raw milk. Sprout Creek also offers visits for adults, too, and you can stop by the farm to taste cheese at their on-site market.
