Paolo Sartori, an Italian immigrant, came to the U.S. at the turn of the century and hustled his way into a job at Stella Cheese. He went on to found S&R Cheese Company with Louis Rossini in Plymouth Wisconsin in 1939. Not only did Paolo develop a reputation as a cheesemaker, but he also developed cheesemaking equipment and is credited with multiple patents. Sartori was the first U.S. cheesemaker to export cheese to Europe in 1970. Paolo’s son Joe handed down the company to his son Jim in 1986, and Jim is still at the helm today. In other words, they’ve been making cheese and making a difference in Wisconsin and the larger cheese industry for generations. Many of the family farms that supply them with milk have been partnered with them for decades. They have a vast collection of cheeses ranging from American originals like BellaVitano to cheeses that acknowledge their European heritage but are firmly grounded in American traditions, such as their Classic Asiago and Parmesan.
