Maurisa Mauro and Princess Maclean founded Ploughgate Creamery in 2008 in Albany, Vermont. She buys milk from Hancock dairy that has a herd of Ayrshires in the town of Coventry nearby. Mauro grew up in Dorset, VT and began working at a farmstead cheesemaking operation when she was all of 15. She worked at a number of other creameries in California and Vermont until finally one of her mentors encouraged her to investigate the sale of an abandoned creamery in Albany. Eventually Maclean stepped away from the business when the two partners realized that the creamery could not support two employees. Ploughgate was supported in the fledgling months by neighboring cheesemakers, Neil Urie of Bonnieview Farm, and the Kehlers from Jasper Hill Farm. They loaned equipment and provided guidance. Currently, Mauro has three cheeses in production. A spreadable cheese called Elmore, and two others that have a similar make but are tweaked to grow different rinds. One is the mold ripened Hartwell and the other is a washed rind called Willoughby. Cheeses from Ploughgate Creamery are aged and distributed at the Cellars at Jasper Hill.
