“Don’t ever go to the supermarket and buy mozzarella. You might as well boil your sneaker. It’s not cheese.” This is a quote from Anthony Campanelli published in 2007. Anthony lived next door to the cheese shop and dairy in New York’s SoHo neighborhood and when former owner, Joe Aiello decided to sell, he jumped at the chance to take over the business. Campanelli convinced his brother Vincent to come on board, his father Frank, and even his uncle Nick joined him for a while. The Dairy really operates as a creamery, supplied with curd from Buffalo, NY that it transforms into fresh mozzarella throughout the day. Joe’s has also become known for their smoked mozzarella, again done right there in the back of the shop over hickory chips.
